Chocolate Banana Cake
Serves: 9-12 depending how big you make the slices
 
Ingredients
  • 3 ripe bananas
  • ½ cup brown sugar, lightly packed OR ½ cup date sugar
  • ½ cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 egg, lightly beaten
  • 1 cup flour
  • 1 tsp baking soda
  • ¼ tsp kosher salt
  • ½ cup Dutch process cocoa powder
  • 1 tsp instant espresso powder (optional, but highly recommended!)
  • 1 cup semi-sweet chocolate chips
  • Mini chocolate chips for topping, optional
Instructions
  1. Preheat oven to 350 degrees. Spray 8-inch square baking pan with cooking spray.
  2. Mash bananas till no lumps remain; stir in sugar. Add applesauce, vanilla extract, and egg, stirring until combined.
  3. Add all the dry ingredients, stirring until combined. Fold in chocolate chips.
  4. Pour batter into baking pan. Top with mini chocolate chips, if desired. Bake 25-30 minutes.
  5. Let cake cool in pan.
