Peanut Butter Hummus
  • 1 can chickpeas, drained & rinsed
  • 3 tbsp creamy, natural peanut butter
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • ½ teaspoon kosher salt
  • 1 small garlic clove
  • ¼ cup water
  • 2 tbsp salted peanuts, chopped
  • ⅛ tsp smoked paprika
  • flaky sea salt for topping, optional
  1. Combine chickpeas, peanut butter, lemon juice, olive oil, garlic, and salt in bowl of food processor.
  2. With food processor on, pour in water until hummus is smooth and creamy. Add more water if you prefer a thinner consistency.
  3. Toss peanuts with smoked paprika. Scrape hummus into a serving dish and top with nuts and a sprinkle of sea salt, if desired.
  4. Serve with cucumber slices, crudite, or pita chips.
