Avocado Veggie Tuna Salad

Serves: 4-6
  • 2 cans albacore tuna (I use Wild Planet), drained
  • 1 cup cucumber, chopped
  • 1 cup green onion (green & white parts), chopped
  • ½ cup red onion, diced
  • 1½ avocados, mashed
  • 2 tbsp olive oil
  • juice of 1 lemon
  • ½ tsp salt
  • ¼ tsp black pepper
  • ¼ cup cilantro, roughly chopped
  1. In a medium bowl, combine tuna, cucumber, green onion, and red onion.
  2. In a separate small bowl, mash avocados with olive oil, lemon, salt, and pepper.
  3. Add avocado mixture and chopped cilantro to tuna mixture and toss till well combined.
Best if enjoyed immediately, but will keep in the refrigerator up to 1 day. (Veggies lose their crunch & avocado starts to brown the longer it sits.)
