Chocolate Covered Peanut Butter Banana Oatmeal Cookies

  • 1 ripe banana
  • 1 large egg, lightly beaten
  • 1 tsp vanilla extract
  • ½ cup natural peanut butter, chunky or smooth - your preference
  • ¼ tsp kosher salt
  • ¼ tsp cinnamon
  • ¼ tsp baking powder
  • 2 cups rolled oats
  • ½ cup semi-sweet chocolate chips, melted, for topping
  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In a medium bowl, mash banana. Add egg, vanilla, and peanut butter and stir to combine.
  3. Sprinkle salt, cinnamon, and baking powder over the wet ingredients and stir to combine.
  4. Add oats and mix until well combines.
  5. Drop cookie mixture by heaping tablespoon onto parchment lined cookie sheets, using your fingers to help shape cookies if necessary.
  6. Bake at 350 degrees for 12 minutes, or until bottoms of cookies are lightly golden brown.
  7. Let cookies cool on baking sheets, then top each with melted chocolate.
