The Great Pumpkin Cookie

Serves: 30 cookies
  • 2 cups all-purpose flour
  • 1 cup old fashioned oats
  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 1 cup butter, softened
  • ¾ cup firmly packed brown sugar
  • ¾ cup sugar
  • 1 egg
  • 1½ tsp vanilla extract
  • 1 cup canned pumpkin
  • 1 cup candy coated chocolates
  • 1 cup raisins, optional
  • 1 cup chopped walnuts, optional
  1. Preheat oven to 350 degrees. Line baking sheets with parchment paper.
  2. In medium bowl, combine flour, oats, baking soda, cinnamon, and salt. Set aside.
  3. In large bowl, cream butter and sugars with handheld mixer until light and fluffy. Beat in egg and vanilla.
  4. Alternate additions of dry ingredients and pumpkin to the butter mixture, mixing well after each addition.
  5. Fold chocolates, raisins, and nuts into the cookie dough, if using.
  6. For each cookie, drop about 3 tbsp dough on baking sheet. Cookies spread quite a bit, so be sure to space them several inches apart. I put 9 cookies on each baking sheet.
  7. Bake 20 minutes or until cookies are lightly browned.
