Cheesy Broccoli and Potato Frittata

  • 1 8 oz package turkey bacon, chopped (I like Trader Joe's - I use 6 slices in the frittata and reserve 2 slices for topping)
  • 1 tbsp olive oil, ghee, or butter
  • 1.5 cups chopped yellow potatoes, about 2 medium potatoes
  • 1 medium onion, chopped
  • 1 lb package frozen broccoli, lightly steamed and large florets broken into smaller pieces (if using fresh broccoli, use ~1 head steamed)
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • ½ tsp turmeric
  • 9 eggs, well beaten
  • ¾ cup shredded cheddar cheese
  1. Preheat oven to 350 degrees.
  2. In a medium skillet, cook bacon. Remove from skillet and set aside.
  3. In the same skillet, heat oil. Add potatoes and cook until browned on the outside and tender on the inside, about 10 minutes.
  4. Add onion to skillet and cook additional 2-3 minutes until translucent.
  5. Add broccoli, bacon, salt, pepper, and turmeric to potato & onion mixture and stir to combine. Spread shredded cheese on top of veggie mixture.
  6. Pour eggs on top of veggie and cheese mixture. Reduce heat to medium low after you add the eggs. Do not stir. Let cook 2-3 minutes or until edges of eggs just begin to set.
  7. Transfer skillet to hot oven to finish cooking, about 20 minutes or until the center of frittata is firm and puffed.
