Mozzarella Stuffed Turkey Meatballs over Zoodles

Serves: 12 meatballs
  • 1 lb ground turkey
  • 1 egg
  • 3 garlic cloves, minced
  • ¼ cup fresh parsley, chopped
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1 tsp sea salt
  • ½ tsp pepper
  • ½ cup ground flax
  • 4 oz mozzarella, cut into 12 1-inch cubes
  • 1 jar marinara sauce
  • zoodles or pasta, for serving
  1. Preheat oven to 350 degrees. Coat baking sheet with cooking spray.
  2. Combine turkey, egg, garlic, herbs, salt, pepper, and flax in mixing bowl and combine until evenly mixed.
  3. With wet hands, shape mixture into 2-inch meatballs. You should get about 12 meatballs. Lightly flatten and make an indentation in each meatball. Place a piece of mozzarella in each meatball and reshape the meat mixture into a round shape, taking care to completely cover the cheese.
  4. Place meatballs on baking sheet. Bake meatballs 15-20 minutes, or until golden on bottoms.
  5. While meatballs bake, pour marinara sauce into a skillet set over medium heat. Bring to a simmer, then reduce heat to medium-low.
  6. Transfer meatballs to simmering marinara sauce. Let cook additional 15 minutes.
  7. Serve meatballs and sauce over prepared zoodles or your choice of cooked pasta.
